Ingredients
The following ingredients have 6 Servings
- 2 lbs golden potatoes (peeled, rinsed well and cut into wedges)
- 3 lbs sweet potatoes (peeled, rinsed well and cut into wedges)
- 1 large onion (peeled and cut into wedges)
- 8 large garlic cloves (peel and slightly crushed)
- 5 lbs chicken thighs with skin (about 8 pieces of chicken)
- McCormick Basil (Oregano, Garlic and Sea Salt All Purpose Seasoning)
- 2 tablespoons Extra Virgin Olive Oil
Instruction
- Preheat the oven to 375 F. degrees.
- Prepare all the vegetables.
- Place about 3/4 of the potatoes, sweet potatoes, onion wedges and garlic cloves in the bottom of a large skillet.
- Season heavily with the McCormick Basil, Oregano, Garlic and Sea Salt All Purpose Seasoning.
- Drizzle olive oil over the vegetables.
- Place the chicken thighs in the skillet in a single layer on top of the vegetables.
- Wedge the remaining vegetables in between the chicken pieces.
- Season the chicken and vegetables with the McCormick Basil, Oregano, Garlic and Sea Salt All Purpose Seasoning.
- Drizzle olive oil over the chicken pieces and vegetables.
- Place the skillet in a preheated 375 F. degree oven. Bake for 60 to 90 minutes or until the center of the thickest piece of chicken has reached an internal temperature of 165 F.
- Serves 4 to 8.
