Ingredients

The following ingredients have 6 Servings
  • 2 lbs golden potatoes (peeled, rinsed well and cut into wedges)
  • 3 lbs sweet potatoes (peeled, rinsed well and cut into wedges)
  • 1 large onion (peeled and cut into wedges)
  • 8 large garlic cloves (peel and slightly crushed)
  • 5 lbs chicken thighs with skin (about 8 pieces of chicken)
  • McCormick Basil (Oregano, Garlic and Sea Salt All Purpose Seasoning)
  • 2 tablespoons Extra Virgin Olive Oil

Instruction

  • Preheat the oven to 375 F. degrees.
  • Prepare all the vegetables.
  • Place about 3/4 of the potatoes, sweet potatoes, onion wedges and garlic cloves in the bottom of a large skillet.
  • Season heavily with the McCormick Basil, Oregano, Garlic and Sea Salt All Purpose Seasoning.
  • Drizzle olive oil over the vegetables.
  • Place the chicken thighs in the skillet in a single layer on top of the vegetables.
  • Wedge the remaining vegetables in between the chicken pieces.
  • Season the chicken and vegetables with the McCormick Basil, Oregano, Garlic and Sea Salt All Purpose Seasoning.
  • Drizzle olive oil over the chicken pieces and vegetables.
  • Place the skillet in a preheated 375 F. degree oven. Bake for 60 to 90 minutes or until the center of the thickest piece of chicken has reached an internal temperature of 165 F.
  • Serves 4 to 8.
