Ingredients

The following ingredients have 10 Servings
  • 1 pound penne pasta
  • 1 pound hot Italian sausage
  • 2 Tablespoons olive oil
  • 1 onion (sliced into long strips)
  • 1 whole red bell pepper (sliced into long strips)
  • 1 whole yellow bell pepper (sliced into long strips)
  • 1 clove garlic (minced)
  • 1 can tomato paste (1.5 oz can)
  • 1 can diced tomatoes (15.5 oz can)
  • ½ teaspoon whole fennel seeds
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ¼ teaspoon red pepper flakes (optional)
  • pasta water
  • 1 tablespoon parmesan cheese

Instruction

  • In a large pot, boil pasta. Drain, reserving 1 cup of pasta water and set aside
  • In same pot cook place sausage. Break up into large chunks. Cook through.
  • Remove sausage from pan and wipe pan with a paper towel to remove grease.
  • Pour olive oil into pan. Add peppers and onions. Saute for approximately 5 minutes.
  • Add garlic and saute for 30 seconds
  • Add crushed tomatoes, tomato paste and seasonings. Add 3/4 cup of pasta water (or tap water)
  • Once mixture comes to a simmer, reduce heat and add sausage and pasta
  • Stir and heat through. Add reserved pasta water if sauce is too thick.
  • Serve with Parmesan cheese and fresh chopped parsley or basil
