Ingredients
The following ingredients have 10 Servings
- 1 pound penne pasta
- 1 pound hot Italian sausage
- 2 Tablespoons olive oil
- 1 onion (sliced into long strips)
- 1 whole red bell pepper (sliced into long strips)
- 1 whole yellow bell pepper (sliced into long strips)
- 1 clove garlic (minced)
- 1 can tomato paste (1.5 oz can)
- 1 can diced tomatoes (15.5 oz can)
- ½ teaspoon whole fennel seeds
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon salt
- ½ teaspoon ground pepper
- ¼ teaspoon red pepper flakes (optional)
- pasta water
- 1 tablespoon parmesan cheese
Instruction
- In a large pot, boil pasta. Drain, reserving 1 cup of pasta water and set aside
- In same pot cook place sausage. Break up into large chunks. Cook through.
- Remove sausage from pan and wipe pan with a paper towel to remove grease.
- Pour olive oil into pan. Add peppers and onions. Saute for approximately 5 minutes.
- Add garlic and saute for 30 seconds
- Add crushed tomatoes, tomato paste and seasonings. Add 3/4 cup of pasta water (or tap water)
- Once mixture comes to a simmer, reduce heat and add sausage and pasta
- Stir and heat through. Add reserved pasta water if sauce is too thick.
- Serve with Parmesan cheese and fresh chopped parsley or basil
