Ingredients
The following ingredients have 6 Servings
- 1 T Olive OIl
- 20 oz Ground Turkey
- 15 oz Black Beans (canned, rinsed and drained)
- 15 oz Corn (canned, drained)
- 10 oz Diced Tomato w/ Chilies (Ro-Tel recommended)
- 1/2 tsp Garlic Powder
- 1/4 tsp Salt
- 1/8 tsp Black Pepper (freshly ground)
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin (ground)
- 2 C Instant Brown Rice
- 2 1/2 C Chicken Broth
- 1 C Shredded Cheddar Cheese
- Optional Toppings: Guacamole / Sour Cream
Instruction
- Heat olive oil in a large skillet, over medium/high heat. Add turkey and brown (about 5 minutes).
- Stir in garlic powder, salt, pepper, chili powder and cumin.
- Add in beans, corn and tomatoes. Stir in the rice and add in the broth. Stir well to make sure rice is distributed evenly (or close to it).
- Bring to a boil. Cover and reduce heat to low. Simmer 10 minutes.
- Sprinkle cheese over the top and replace cover until cheese is melted (about 2 minutes).
- Top with guacamole and/or sour cream.
