Ingredients
The following ingredients have 4 Servings
- 1/2 cup mustard (yellow, whole grain, or dijon)
- 1/2 cup honey
- 1/4 cup mayo or light mayo
- 1 pound green beans
- 2 large chicken breasts
- kosher salt, pepper
- 1/2 cup panko breadcrumbs
Instruction
- Combine mustard, honey, and mayo in a bowl, whisk together, set aside.
- Remove the green bean stems and cut the green beans in half.
- Cut the chicken breasts in half lengthwise, creating 4 thinner chicken breasts. Place on a lined baking sheet and sprinkle with kosher salt and pepper.
- Toss the green beans with a tablespoon of the honey mustard sauce and place them on the baking sheet around the chicken breasts. Top each chicken breast with a tablespoon of the honey mustard sauce and panko bread crumbs.
- Put the baking sheet in a 375 degree oven for 25 minutes. Set the broiler to high for last minute of baking to create a crisper panko coating.
- Serve with extra honey mustard sauce on the side.
