Ingredients

The following ingredients have 3 Servings
  • 3 chicken breasts (diced into quarter inch pieces)
  • 1 cup uncooked brown rice (I used Minute Rice)
  • 2/3 cup water*
  • 3 cups fresh broccoli florets
  • 5 tbsp sun-dried tomatoes
  • 1 tsp garlic powder
  • 1 tsp red pepper flakes
  • salt and pepper to taste

Instruction

  • Preheat oven to 350 F.
  • To a 10"x7" rectangular baking dish, add the uncooked brown rice and add 2/3 cup of water.
  • Layer the chicken and broccoli florets on top then sprinkle with salt, pepper, garlic powder and red chili pepper flakes. Place sun-dried tomatoes on top.
  • Cover tightly with tin foil and bake at 350 F 60-90. Check at 60 minutes to see if the rice is done. If not, re-cover and bake another 30 minutes until finished.
