Ingredients
The following ingredients have 3 Servings
- 3 chicken breasts (diced into quarter inch pieces)
- 1 cup uncooked brown rice (I used Minute Rice)
- 2/3 cup water*
- 3 cups fresh broccoli florets
- 5 tbsp sun-dried tomatoes
- 1 tsp garlic powder
- 1 tsp red pepper flakes
- salt and pepper to taste
Instruction
- Preheat oven to 350 F.
- To a 10"x7" rectangular baking dish, add the uncooked brown rice and add 2/3 cup of water.
- Layer the chicken and broccoli florets on top then sprinkle with salt, pepper, garlic powder and red chili pepper flakes. Place sun-dried tomatoes on top.
- Cover tightly with tin foil and bake at 350 F 60-90. Check at 60 minutes to see if the rice is done. If not, re-cover and bake another 30 minutes until finished.
