Ingredients

The following ingredients have 10 Servings
  • 2 large eggs
  • 2 cups skim milk
  • 1/4 cup molasses
  • 2 tablespoons brown sugar (packed (I prefer dark brown sugar))
  • 2 cups whole wheat white flour (or half whole wheat and half all purpose)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 4 tablespoons unsalted butter (melted and cooled slightly)
  • 2 tablespoons finely chopped candied ginger (or crystallized ginger, plus more for serving (I use [this brand]))
  • Powdered sugar, whipped cream, chocolate chips or chopped candied ginger, for serving (optional)

Instruction

  • Preheat your waffle iron according to manufacturer's instructions.
  • Beat the eggs in a large bowl until combined.  Whisk in the milk, molasses, and brown sugar until incorporated.
  • Stir in the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves until just combined, then gently stir in the melted butter and crystallized ginger.
  • Spray the waffle iron with cooking spray and cook the waffles according to manufacturer's instructions.  Repeat until all of the batter has been used.
  • Serve the waffles with your favorite toppings and enjoy!
