Ingredients
The following ingredients have 10 Servings
- 2 large eggs
- 2 cups skim milk
- 1/4 cup molasses
- 2 tablespoons brown sugar (packed (I prefer dark brown sugar))
- 2 cups whole wheat white flour (or half whole wheat and half all purpose)
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 4 tablespoons unsalted butter (melted and cooled slightly)
- 2 tablespoons finely chopped candied ginger (or crystallized ginger, plus more for serving (I use [this brand]))
- Powdered sugar, whipped cream, chocolate chips or chopped candied ginger, for serving (optional)
Instruction
- Preheat your waffle iron according to manufacturer's instructions.
- Beat the eggs in a large bowl until combined. Whisk in the milk, molasses, and brown sugar until incorporated.
- Stir in the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves until just combined, then gently stir in the melted butter and crystallized ginger.
- Spray the waffle iron with cooking spray and cook the waffles according to manufacturer's instructions. Repeat until all of the batter has been used.
- Serve the waffles with your favorite toppings and enjoy!
