The following ingredients have 10 Servings

  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1 cup extra virgin olive oil ((plus additional for greasing the pan))
  • 1 tsp lemon zest, grated
  • 2 Tbsp lemon juice
  • 1/2 cup buttermilk
  • 5 oz mascarpone, (softened)
  • 8 oz confectioners sugar
  • 1 1/2 tsp vanilla extract
  • 2 cups fresh figs ((either halved or quartered for topping))
