The following ingredients have 9 Servings
- 4 - eggs, slightly beaten
- 1/2 cup(s) sugar
- 1/4 teaspoon(s) salt
- 1/2 teaspoon(s) vanilla extract
- 2 1/2 cup(s) milk, scalded
- 1 - 9" unbaked pastry shell
- - ground nutmeg
Instruction
- In a medium to large pan, bring milk to just below the boiling point--tiny bubbles will begin to form at the edges.
- While milk is heating, blend eggs, sugar, salt, and vanilla in a large bowl. Gradually stir in the scalded milk.
- Pour into unbaked pastry shell. Sprinkle with nutmeg.
- Bake on center rack in 350-degree oven for 35 to 40 minutes, or until knife inserted near center of pie comes out clean.
- Cool pie on wire rack; then chill.
- NOTE: An alternative topping: instead of nutmeg, sprinkle with 1/2 cup flaked coconut.
