Ingredients

The following ingredients have 9 Servings
  • 4 - eggs, slightly beaten
  • 1/2 cup(s) sugar
  • 1/4 teaspoon(s) salt
  • 1/2 teaspoon(s) vanilla extract
  • 2 1/2 cup(s) milk, scalded
  • 1 - 9" unbaked pastry shell
  • - ground nutmeg

Instruction

  • In a medium to large pan, bring milk to just below the boiling point--tiny bubbles will begin to form at the edges.
  • While milk is heating, blend eggs, sugar, salt, and vanilla in a large bowl. Gradually stir in the scalded milk.
  • Pour into unbaked pastry shell. Sprinkle with nutmeg.
  • Bake on center rack in 350-degree oven for 35 to 40 minutes, or until knife inserted near center of pie comes out clean.
  • Cool pie on wire rack; then chill.
  • NOTE: An alternative topping: instead of nutmeg, sprinkle with 1/2 cup flaked coconut.
