Ingredients

The following ingredients have 4 Servings
  • 3 large eggs
  • ¾ cup light tasting oil (like canola, vegetable, or grapeseed oil)
  • 3 cups sugar
  • 1 tablespoon vanilla
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1 tablespoon baking soda
  • 5 cups peeled and diced apples
  • 1 ½ cup toasted walnuts

Instruction

  • Preheat the oven to 350 ° F. Oil the inside of a 9x13-inch pan, and set aside.
  • Using a hand mixer or a stand mixer, beat together eggs, oil, and sugar for 2-3 minutes. Mix in vanilla, cinnamon, and salt.
  • Add the flour and baking soda, and slowly beat until barely combined.
  • Add the apples and walnuts, and mix together until well combined.
  • Turn the mixture into the oiled pan. Bake in 350° F oven about 1 hour, or until the sides of the cake begin to pull away from the sides of the pan and the top is a caramel brown color. Insert tooth pick in center; it will come out clean when cake is baked.
  • Cool the cake in the pan. Once cooled, dust with powdered sugar or serve with whipped cream. Cake keeps well in cool place.
