Ingredients

The following ingredients have 4 Servings
  • 0.75 cup butter
  • 0.667 cup caster sugar
  • 1 egg yolk (beaten)
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 cup rolled oats

Instruction

  • Heat the oven to 190°C (170° fan) 375°F gas 5. Line a large baking tray with non-stick baking paper.
  • Beat the butter and sugar in a mixing bowl until light and creamy. Beat in the egg yolk.
  • Sift in the flour, bicarbonate of soda and salt and stir until blended. Stir in the oats until well mixed. Chill for 30 minutes.
  • Drop teaspoons of the mixture, well apart onto the baking trays. Gently flatten them with the base of a floured glass.
  • Bake for 10-12 minutes until golden. Cool on the baking trays for 3 minutes, then place on a wire rack to cool completely.
