Ingredients

The following ingredients have 4 Servings
  • 2 tbs olive oil
  • 1 brown onion (diced)
  • 1 tbs ginger (chopped)
  • 2 garlic clove (finely chopped)
  • 800 g pumpkin (chopped,peeled)
  • 1 l Massel Chicken Style Liquid Stock
  • 1/2 cup peanut butter
  • 2 tbs lime juice (to taste)
  • bunch coriander leaves (*to serve)

Instruction

  • Place the oil in a large saucepan over medium heat and cook the onion, ginger and garlic for about 5 minutes, or until soft.
  • Add the pumpkin and stock and cook for about 25 minutes or until the pumpkin is tender.
  • Puree to a smooth consistency, adding a little more water if necessary.
  • Add the peanut butter, lime juice and season to taste. Top soup with coriander leaves and serve warm with naan or roti bread.
