Ingredients
The following ingredients have 16 Servings
- 1 cup Ultragrain All-Purpose Flour
- 1/2 cup whole wheat flour
- 1/2 cup oat bran
- 2 tablespoons ground flaxseed
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 cup light brown sugar
- 3 tablespoons butter (, melted)
- 1 teaspoon pure vanilla extract
- 2 eggs (, lightly beaten)
- 1/2 cup dried fruits ((I used dried cherries and dried blueberries))
- 1/2 cup ground walnuts
Instruction
- Preheat oven to 350F.
- Line two baking sheets with parchment paper and set aside.
- In a mixing bowl, whisk together the flours, oat bran, flaxseed, baking soda and cinnamon; whisk until well combined and set aside.
- In a separate mixing bowl, combine brown sugar, melted butter, vanilla, and eggs; stir until incorporated.
- Stir in dried fruits.
- Add flour mixture to egg mixture and stir until moist and completely combined.
- Stir in walnuts.
- Drop mounds of dough onto prepared baking sheets, 2 inches apart.
- Bake, one sheet at a time, for 10 to 12 minutes, or until edges are lightly browned.
- Remove from oven and let cool on baking sheet for 1 minute.
- Transfer to wire rack and cool completely.
