Ingredients
The following ingredients have 4 Servings
- 2 cup self-raising flour
- 2 cup brown sugar loosely packed
- 125 g butter chopped cold
- 2 tsp mixed spice
- 1 tsp baking powder
- 2 tsp ground nutmeg
- 1 egg lightly beaten
- 1 cup milk
Instruction
- Preheat oven to 180C and grease and line a 23 cm baking pan or springform pan.
- In a large bowl, mix together the flour and sugar, mixed spice and half the nutmeg.
- Rub the butter through the mix with your fingers, until all the butter is incorporated and the mixture feels like breadcrumbs.
- Spoon almost half this mixture over the base of the baking pan.
- Spread it evenly across the base, without packing it down too hard.
- Keep the other half of the dry mix to one side.
- In another bowl, whisk together the egg and the milk, then add the rest of the nutmeg and the baking soda and stir through.
- Pour this into the remaining dry mixture and combine.
- Pour over the base and bake for 45 minutes.
- Allow to cool in the tin, then run a knife around the edge before removing,
