Ingredients

The following ingredients have 4 Servings
  • 1 package smoked sausage
  • 3 cups black beans (drained and rinsed)
  • 1 can kernel corn (drained)
  • 1 14 oz can stewed tomatoes (undrained)
  • 1/2 onion (chopped)
  • 2 TB olive oil
  • 1 tsp minced garlic
  • 1/4 cup water
  • 1/2 tsp all purpose seasoning
  • 1/2 tsp Tony's Cajun seasoning

Instruction

  • Slice smoke sausage into bite sized pieces.
  • In a large cast iron skillet, heat olive oil over medium heat. Add garlic and onions, and cook for about 5 minutes until they start to soften.
  • Add sausage and cook for about 10-15 minutes until brown, stirring frequently.
  • Add corn, stir and cook another 5 minutes. Add beans, tomatoes, seasonings and water. Combine well, cover, and simmer for 10 minutes.
  • Serve.
