Ingredients
The following ingredients have 4 Servings
- 1 package smoked sausage
- 3 cups black beans (drained and rinsed)
- 1 can kernel corn (drained)
- 1 14 oz can stewed tomatoes (undrained)
- 1/2 onion (chopped)
- 2 TB olive oil
- 1 tsp minced garlic
- 1/4 cup water
- 1/2 tsp all purpose seasoning
- 1/2 tsp Tony's Cajun seasoning
Instruction
- Slice smoke sausage into bite sized pieces.
- In a large cast iron skillet, heat olive oil over medium heat. Add garlic and onions, and cook for about 5 minutes until they start to soften.
- Add sausage and cook for about 10-15 minutes until brown, stirring frequently.
- Add corn, stir and cook another 5 minutes. Add beans, tomatoes, seasonings and water. Combine well, cover, and simmer for 10 minutes.
- Serve.
