Ingredients
The following ingredients have 4 Servings
- 1 T olive oil
- 1 lb ground chicken
- 2 carrots (finely diced)
- 1 sweet onion (diced)
- 1 lb broccolini
- 2 T brown sugar
- 1/4 C soy sauce
- 1 T sesame oil
- 1 tsp fish sauce
- 2 garlic cloves (minced)
- 1/2 tsp crushed red pepper
- 8 oz rice noodles
- Optional garnishes: chopped green onion (chopped peanuts)
Instruction
- Prepare rice noodles according to package. Set aside.
- In a large skillet, over medium/high heat, heat oil and add ground chicken. Cook until chicken is cooked through. Remove chicken with a slotted spoon and set aside of plate.
- Return skillet to burner and add onion, broccolini and carrot. Cook 5 minute, stirring occasionally.
- While veggies are cooking, in a small bowl, whisk together brown sugar, soy sauce, sesame oil, fish sauce, garlic and red pepper.
- Add prepared noodles to skillet and toss well, reduce heat to medium/low. Add sauce to skillet and toss with tongs, well to incorporate sauce. Cook 2-3 minutes more and serve immediately.
- Garnish with chopped green onions and/or chopped peanuts, if desired.
