Ingredients

The following ingredients have 4 Servings
  • 1 T olive oil
  • 1 lb ground chicken
  • 2 carrots (finely diced)
  • 1 sweet onion (diced)
  • 1 lb broccolini
  • 2 T brown sugar
  • 1/4 C soy sauce
  • 1 T sesame oil
  • 1 tsp fish sauce
  • 2 garlic cloves (minced)
  • 1/2 tsp crushed red pepper
  • 8 oz rice noodles
  • Optional garnishes: chopped green onion (chopped peanuts)

Instruction

  • Prepare rice noodles according to package. Set aside.
  • In a large skillet, over medium/high heat, heat oil and add ground chicken. Cook until chicken is cooked through. Remove chicken with a slotted spoon and set aside of plate.
  • Return skillet to burner and add onion, broccolini and carrot. Cook 5 minute, stirring occasionally.
  • While veggies are cooking, in a small bowl, whisk together brown sugar, soy sauce, sesame oil, fish sauce, garlic and red pepper.
  • Add prepared noodles to skillet and toss well, reduce heat to medium/low. Add sauce to skillet and toss with tongs, well to incorporate sauce. Cook 2-3 minutes more and serve immediately.
  • Garnish with chopped green onions and/or chopped peanuts, if desired.
