Ingredients

The following ingredients have 9 Servings
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup buttermilk
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Cinnamon Topping:
  • 1/2 cup sugar
  • 1 1/2 teaspoons cinnamon

Instruction

  • Preheat oven to 350º F.
  • In a large bowl or mixer, cream together butter and sugar for 2-3 minutes, or until light and fluffy, then mix in egg and vanilla extract until incorporated.
  • In a separate bowl, whisk together flour, baking soda and salt.
  • Starting and ending with the dry ingredients, alternate between adding the flour mixture and buttermilk until just combined.
  • Whisk together cinnamon topping ingredients (1/2 cup sugar and 1 1/2 teaspoons cinnamon) together and set aside.
  • Pour 1/2 batter into loaf pan, then sprinkle with 1/2 cinnamon sugar mixture. Top with remaining batter and sprinkle remaining sugar mixture over the top.
  • Place baking dish in oven and bake for 45-50 minutes, or until toothpick inserted in center comes out clean.
  • Remove from oven and let cool 15-20 minutes. Slice, serve and enjoy!
