- 3 small zucchini (sliced lengthwise ⅛-inch thick)
- 3 small yellow squash (sliced lengthwise ⅛-inch thick)
- 1 small eggplant (sliced lengthwise ⅛-inch thick)
- 15 ounces ricotta cheese ((make your own))
- 2 cups mozzarella cheese (shredded)
- ¼ cup Parmigiano Reggiano (freshly grated)
- dried oregano (for garnish (optional))
Instruction
- Prepare the homemade ricotta cheese and tomato sauce ahead of time and have it ready to use.
