Ingredients
The following ingredients have 4 Servings
- 1 quart tomato juice, chilled
- 1/2 cup minced cilantro leaves, about 1/2 bunch
- 1 teaspoon minced garlic, 1 clove
- 2 green onions finely chopped
- 1/4 cup fresh lime juice
- 1/2 teaspoon ground cumin
- Salt to taste
- 1 ripe avocado peeled, pitted and diced
- a few drops of tabasco sauce
- 1 jalapeño pepper seeded and finely minced
- a drizzle of extra virgin olive oil
- 1 lime, thinly sliced
Instruction
- Pour the tomato juice into a large bowl. Stir in the cilantro, garlic, green onions, cumin and lime juice. If you want it hotter, add a tabasco and jalapeños. Season to taste with salt. Stir in the avocado. Chill until ready to serve.
- Divide the soup into bowls. Garnish each bowl with a drizzle of extra virgin olive oil and a slice of lime.
