Ingredients

The following ingredients have 6 Servings
  • 1½ cups crumbs (cookie or graham cracker)
  • ¼ cup butter ( melted)
  • 1½-1¾ cups apricots (5-6 medium-large/peeled and chopped)
  • 1 tablespoon gelatine
  • 2 tablespoons milk (I use 2%)
  • 3½ ounces white chocolate (good quality bar chopped) melted*
  • 8 ounces cream cheese (whole fat)
  • ¾ cup icing/powdered sugar
  • 1 cup cream heavy/whole/whipping (at least 30% fat)
  • 4-5 apricots (peeled and sliced)
  • ½ tablespoon corn starch (sifted)
  • ¼ cup granulated or fine sugar
  • ½ teaspoon vanilla
  • 2 tablespoons water

Instruction

  • Mix graham cracker or cookie crumbs and the melted butter, press down on the bottom of a 7 – 8 inch (17 – 20 cm) springform cake pan (or line a regular cake pan with plastic wrap). Place in refrigerator while making the filling.
