Ingredients

The following ingredients have 10 Servings
  • 1 cup medjool dates [around 11 dates]
  • ½ cup nuts [i used a mix of almonds and cashews]
  • 1 tablespoon coconut oil
  • 1 packet protein powder (single serving EAS Lean 15 [I used vanilla cream])
  • ¼ cup toasted shredded coconut
  • 1.5 tablespoons chocolate chip
  • ¾ tablespoon water (optional)

Instruction

  • To a food processor add dates and nuts. If the dates you are using are dry, soak them in warm water for 10 minutes before using.
  • Pulse the dates and nuts mixture. Don't grind it too much, you want to bite into the nuts.
  • Add coconut oil and pulse.
  • To this mixture now add 1 single serving packet of EAS Lean 15 protein powder. I used vanilla cream flavor. Pulse to combine.
  • Transfer mixture to a plate. At this point you can add little water if the dough isn't coming together. Add only 1/2 tablespoon at first and more only if required.
  • Add chocolate chips and make a dough.
  • Divide the dough into 9-10 equal balls. I used a cookie scoop to get equal sized balls.
  • Roll these no bake protein balls into toasted shredded coconut.
  • Keep the protein balls into the refrigerator for 2-3 hours before eating! Keep them refrigerated.
