Ingredients
The following ingredients have 16 Servings
- PIE CRUST COATING INGREDIENTS:
- ¼ cup macadamia nuts
- 1 tsp lime zest
- 2 tbsp sweetener of choice: Swerve for low carb (or coconut sugar for paleo, erythritol granular)
- Pinch sea salt if nuts are unsalted
- KEY LIME PIE BITES INGREDIENTS:
- ½ cup macadamia nuts (raw or dry roasted)
- ½ cup sunflower seeds (raw shelled)
- 3 tbsp lime juice
- 1 tsp lime zest
- 1 tsp vanilla extract
- ⅓ cup coconut oil (melted)
- ¼ cup sweetener of choice: Swerve for low carb (or coconut sugar for paleo)
- ¼ cup unsweetened coconut milk
- 1 tbsp coconut flour
Instruction
- In a food processor mix all the pie crust coating ingredients. Pulse until a coarse, grainy flour forms. Pour pie crust coating mixture into a bowl and set aside.
- In the food processor add all the key lime pie bite ingredients, and pulse until a thick and creamy nut butter or hummus like texture forms.
- Grease or oil a candy mold or ice cube tray. Fill the mold tray with the creamy key lime pie mixture.
- Freeze the candy molds with key lime pie mixture for 35 to 45 minutes, or until solid and firm.
- Remove key lime pie bites from mold, and roll them in the pie crust coating in the bowl.
- Keep these and store in the freezer in a container, as they don’t get hard frozen and stay firm but creamy even if in the freezer for days.
