Ingredients

The following ingredients have 48 Servings
  • 8 ounces Medjool dates, (pitted, (12- 15 dates))
  • 1/4 cup butter, (or coconut oil)
  • 1/2 cup brown sugar
  • 2 cups Rice Krispies cereal
  • 1/4 cup dessicated coconut, (fine, unsweetened)

Instruction

  • Pit the dates and chop each date into 6 to 8 pieces.
  • Add butter and sugar to a heavy-bottomed saucepan along with the dates.
  • Heat over low to medium heat until a thick paste forms, about 7 to 8 minutes. Remove from the heat and transfer to a glass bowl. Allow the mixture to cool slightly for 4 to 5 minutes.
  • Add the crisp rice cereal, a little at a time. Stir until evenly distributed.
  • Lay the mixture on a sheet of parchment paper. Roll into two logs about eight inches long. Roll in finely shredded coconut (or leave plain).
  • Wrap tightly with parchment paper or plastic wrap. Store in a tightly covered container.
  • When you're ready to serve, slice the log into rounds about 1/3 to 1/4 inch thick.
