The following ingredients have 48 Servings
- 8 ounces Medjool dates, (pitted, (12- 15 dates))
- 1/4 cup butter, (or coconut oil)
- 1/2 cup brown sugar
- 2 cups Rice Krispies cereal
- 1/4 cup dessicated coconut, (fine, unsweetened)
Instruction
- Pit the dates and chop each date into 6 to 8 pieces.
- Add butter and sugar to a heavy-bottomed saucepan along with the dates.
- Heat over low to medium heat until a thick paste forms, about 7 to 8 minutes. Remove from the heat and transfer to a glass bowl. Allow the mixture to cool slightly for 4 to 5 minutes.
- Add the crisp rice cereal, a little at a time. Stir until evenly distributed.
- Lay the mixture on a sheet of parchment paper. Roll into two logs about eight inches long. Roll in finely shredded coconut (or leave plain).
- Wrap tightly with parchment paper or plastic wrap. Store in a tightly covered container.
- When you're ready to serve, slice the log into rounds about 1/3 to 1/4 inch thick.
