Ingredients

The following ingredients have 4 Servings
  • 1 Cup Dried Christmas Cake Fruit Mix ((120g))
  • 3 Cups Arrowroot Biscuits (Or Graham Crackers) ((250g))
  • 1/2 Cup Walnuts, Chopped ((65g))
  • 1/2 Cup Sugar ((100g))
  • 1/2 Cup Water
  • 2 Tbsp. Cocoa ((12g))
  • 1/4 Cup Butter ((55g))
  • 1 and 1/3 Cups Dark Chocolate ((250g))
  • 1 Cup White Chocolate, Melted ((180g))
  • 1-4 Glace Cherries

Instruction

  • Crush the arrowroot biscuits and add the dried fruit and walnuts in a large bowl.
  • In a saucepan melt the sugar, water, cocoa, butter and dark chocolate together until smooth.
  • Pour over the dry ingredients and mix together.
  • Line a small bowl with cling wrap and pour the mixture into the bowl and press in evenly.
  • Allow the pudding to set for at least an hour but preferably two.
  • Once set, pull out the pudding and peel of the cling wrap.
  • Melt the white chocolate and pour over the top of the pudding in a Christmas pudding type of design.
  • Top with the glace cherries and serve!
