Ingredients

The following ingredients have 4 Servings
  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup cocoa powder
  • 3/4 cup Nutella
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 3 cups quick cooking oats
  • 1/2-1 cup shredded sweetened coconut
  • Whole almonds

Instruction

  • In a large saucepan or high sided sauté pan add the butter, sugar, milk and cocoa powder.
  • Melt together and bring to a boil and boil for 1 minute then remove from heat.
  • Add in the Nutella, vanilla and coconut extract and whisk until smooth and creamy.
  • Mix in the oats and coconut and stir until fully covered and coated.
  • Place a piece of parchment paper on a flat surface and, using a cookie scoop or ice cream scoop, scoop about 2 heaping tablespoons into mounds on your parchment paper, press one whole almond on each cookie and let it set for about 30-40 minutes.
