The following ingredients have 8 Servings
- 1/2 cup Champagne vinegar
- 1 to 2 tablespoons Dijon mustard
- 1 teaspoon anchovy paste
- Salt and freshly ground pepper (to taste)
- 1 1/2 cups extra-virgin olive oil
- 1/4 cup minced scallions (white and green parts only)
- 2 tablespoons minced dill leaves
- 2 tablespoons minced flat-leaf parsley leaves
- 2 tablespoons basil leaves (thinly sliced)
- 1 pound small white boiling potatoes
- 1 pound small red boiling potatoes
- 1/2 cup vinaigrette
- Four 1-inch (25 mm) thick fresh tuna steaks
- Extra-virgin olive oil
- Salt and freshly ground pepper
- 3/4 pound French string beans (haricots verts) (stems removed and blanched)
- 1 recipe French Potato Salad ((above))
- 8 ripe Roma tomatoes (cut into wedges)
- 4 hard-boiled eggs (peeled and cut in half)
- 1/2 pound good black olives (pitted)
- 1 can anchovies ((optional))
- 1 bunch watercress or arugula
