The following ingredients have 8 Servings
  • 1/2 cup Champagne vinegar
  • 1 to 2 tablespoons Dijon mustard
  • 1 teaspoon anchovy paste
  • Salt and freshly ground pepper (to taste)
  • 1 1/2 cups extra-virgin olive oil
  • 1/4 cup minced scallions (white and green parts only)
  • 2 tablespoons minced dill leaves
  • 2 tablespoons minced flat-leaf parsley leaves
  • 2 tablespoons basil leaves (thinly sliced)
  • 1 pound small white boiling potatoes
  • 1 pound small red boiling potatoes
  • 1/2 cup vinaigrette
  • Four 1-inch (25 mm) thick fresh tuna steaks
  • Extra-virgin olive oil
  • Salt and freshly ground pepper
  • 3/4 pound French string beans (haricots verts) (stems removed and blanched)
  • 1 recipe French Potato Salad ((above))
  • 8 ripe Roma tomatoes (cut into wedges)
  • 4 hard-boiled eggs (peeled and cut in half)
  • 1/2 pound good black olives (pitted)
  • 1 can anchovies ((optional))
  • 1 bunch watercress or arugula
