Ingredients
The following ingredients have 2 Servings
- 1 cup shredded rotisserie chicken
- 1-2 small cucumbers (thinly sliced)
- bag of salad greens or head of butterhead/Boston lettuce (sliced)
- 1-2 green onions (thinly sliced)
- 1/2 avocado (cubed)
- 1/4 cup sliced almonds
- Dressing:
- 1 tablespoon extra virgin olive oil
- 1 tablespoon whole grain dijon mustard
- 1 lime (juiced)
Instruction
- In a small bowl combine dressing ingredients. Whisk until smooth.
- Heat pan over medium heat and lightly toast almonds until lightly browned (no oil, necessary)
- In a large bowl combine shredded chicken, cucumbers, salad greens, green onions, avocado and almonds.
- Top with dressing and toss until combined.
