Ingredients

The following ingredients have 2 Servings
  • 1 cup shredded rotisserie chicken
  • 1-2 small cucumbers (thinly sliced)
  • bag of salad greens or head of butterhead/Boston lettuce (sliced)
  • 1-2 green onions (thinly sliced)
  • 1/2 avocado (cubed)
  • 1/4 cup sliced almonds
  • Dressing:
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon whole grain dijon mustard
  • 1 lime (juiced)

Instruction

  • In a small bowl combine dressing ingredients. Whisk until smooth.
  • Heat pan over medium heat and lightly toast almonds until lightly browned (no oil, necessary)
  • In a large bowl combine shredded chicken, cucumbers, salad greens, green onions, avocado and almonds.
  • Top with dressing and toss until combined.
