The following ingredients have 8 Servings
  • 4 cups Russet potatoes, (peeled and finely grated)
  • ¼ cup olive oil
  • 1 large egg, (lightly beaten)
  • 1 tablespoon fresh tarragon, (finely chopped)
  • ¾ teaspoon salt
  • freshly ground black pepper
  • 7 strips applewood smoked bacon
  • olive oil for the pan
  • 1½ cups yellow onion, (thinly sliced)
  • 1 teaspoon garlic, (minced)
  • 1 pound Crimini mushrooms, (washed and dried, thinly sliced)
  • ¼ cup dry sherry
  • 1 tablespoon fresh tarragon, (finely chopped)
  • 8 large eggs
  • ¾ cup Gruyère, (grated)
  • salt and freshly ground black pepper
