- 4 cups Russet potatoes, (peeled and finely grated)
- ¼ cup olive oil
- 1 large egg, (lightly beaten)
- 1 tablespoon fresh tarragon, (finely chopped)
- ¾ teaspoon salt
- freshly ground black pepper
- 7 strips applewood smoked bacon
- olive oil for the pan
- 1½ cups yellow onion, (thinly sliced)
- 1 teaspoon garlic, (minced)
- 1 pound Crimini mushrooms, (washed and dried, thinly sliced)
- ¼ cup dry sherry
- 1 tablespoon fresh tarragon, (finely chopped)
- 8 large eggs
- ¾ cup Gruyère, (grated)
- salt and freshly ground black pepper
