Ingredients

The following ingredients have 24 Servings
  • 375 g sultanas
  • 3 eggs
  • 250 g plain flour
  • 60 g self-raising flour
  • 250 g butter
  • 250 g white sugar
  • 1 tsp baking powder
  • 2 tsp cornflour
  • 1/2 cup water
  • 1 tsp vanilla essence
  • 1/2 cup almonds chopped

Instruction

  • Boil sultanas in ¾ of a cup water and then cool.
  • Cream butter and sugar together in a large bowl.
  • Mix cornflour with water. Add cornflour mixture with vanilla and eggs, then sift in dry ingredients. Add in boiled sultanas last.
  • Pour the mixture into a 23 cm square cake tin, lined with baking paper.
  • Scatter chopped almonds over the top and press gently into cake.
  • Bake at 180C for 1½ hours.
