Ingredients
The following ingredients have 4 Servings
- 600g beef mince
- ½ cup dried breadcrumbs
- 1 egg lightly beaten
- 3 garlic cloves crushed
- 1/2 cup chopped fresh basil
- 200g mozzarella cut into 2cm cubes
- 2 tbs olive oil
- 1 small brown onion finely chopped
- 700g jar tomato pasta sauce
- 2 large ripe tomatoes diced
- 1 tbs finely chopped oregano
- 375g spaghetti
- 1 pinch salt and pepper *to taste
Instruction
- Combine the mince, breadcrumbs, egg, 1 clove garlic and half the basil in a large bowl. Season with salt and pepper. Shape 2 tablespoons beef mixture around each cube of cheese to enclose. Roll into a meatball shape.
- Heat half the oil in a large saucepan over medium-high heat. Cook meatballs, turning, for 5 minutes, or until browned all over. Transfer to a plate.
- Heat remaining oil in the same pan over medium heat. Cook onion and remaining garlic, stirring, for 5 minutes or until softened. Add pasta sauce, fresh tomato and oregano and bring to a simmer. Simmer, covered, for 10 minutes. Add meatballs and simmer, uncovered, for 5 minutes or until meatballs are cooked through.
- Meanwhile, cook the pasta in a large saucepan of boiling salted water until al dente. Drain. Stir remaining basil into sauce.
- Serve pasta topped with meatballs and sauce.
