  • 4-6 ounces fresh mozzarella (sliced thin, or can also used smoked mozzarella)
  • 8 slices fresh basil leaves (plus more for serving)
  • 1 cup of milk
  • 1 1/2 cups flour
  • 1/2 cup grated parmesan cheese
  • 4 eggs
  • 2 cup fresh or frozen blueberries
  • 1/4 cup coconut sugar (1/8 cup brown sugar and 1/8 cup honey also work)
  • 1/4 cup balsamic vinegar
  • 1 lemon (juiced)
