Ingredients
The following ingredients have 4 Servings
- 8 medium carrots (grated (I used a spiralizer))
- 1/2 cup chopped parsley
- 3 tbsps lemon juice
- 2 tsps olive oil (extra virgin)
- 2 cloves garlic (chopped)
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp sea salt
- 1/2 tsp cayenne pepper
Instruction
- Combine all of your ingredients in a bowl and mix well.
- This salad is best if you let it sit and marinate (covered) in the fridge for about 2-3 hours before serving.
- Serve with your favorite summer main course.
