Ingredients
The following ingredients have 9 Servings
- 2 large eggs
- 1 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 3 tablespoons honey
- 3/4 cup unsweetened almond milk
- 2 tablespoons melted coconut oil
- 2 cups rolled oats
- 1/2 cup white whole wheat flour (any kind of flour will work)
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- 1 tablespoon flaxseed meal
- 1 cup shredded carrots
- ½ cup golden raisins
- ⅓ cup shredded unsweetened coconut
Instruction
- First, preheat the oven to 350ºF then spray an 8×8-inch baking dish with nonstick cooking spray.
- Add the dry ingredients to a large bowl and whisk until combined. Set aside.
- Place all the wet ingredients (except for the coconut oil) to another bowl and mix until combined.
- Slowly add the dry ingredients to the wet ingredients.
- Add the coconut oil to the batter and mix.
- Transfer the batter into the baking dish and bake at 350ºF for about 30 minutes or until the top begins to brown.
- Remove from the oven and let cool before slicing and serving.
