Ingredients

The following ingredients have 9 Servings
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 3 tablespoons honey
  • 3/4 cup unsweetened almond milk
  • 2 tablespoons melted coconut oil
  • 2 cups rolled oats
  • 1/2 cup white whole wheat flour (any kind of flour will work)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 tablespoon flaxseed meal
  • 1 cup shredded carrots
  • ½ cup golden raisins
  • ⅓ cup shredded unsweetened coconut

Instruction

  • First, preheat the oven to 350ºF then spray an 8×8-inch baking dish with nonstick cooking spray.
  • Add the dry ingredients to a large bowl and whisk until combined. Set aside. 
  • Place all the wet ingredients (except for the coconut oil) to another bowl and mix until combined. 
  • Slowly add the dry ingredients to the wet ingredients. 
  • Add the coconut oil to the batter and mix.
  • Transfer the batter into the baking dish and bake at 350ºF for about 30 minutes or until the top begins to brown.
  • Remove from the oven and let cool before slicing and serving.
