Ingredients
The following ingredients have 4 Servings
- 3 cup(s) all purpose flour
- 2 teaspoon(s) baking soda
- 1/2 teaspoon(s) baking powder
- 1 teaspoon(s) salt
- 1 1/2 teaspoon(s) cinnamon, ground
- 2 cup(s) sugar
- 2 teaspoon(s) vanilla extract
- 3 - eggs
- 2 cup(s) coarsley shredded zuchinni
- 3/4 cup(s) finely chopped pecans or walnuts
- 1 can(s) (8 0z) crushed pineapple, drained
- 1 cup(s) canola oil
Instruction
- Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside.
- Beat eggs slightly in large bowl then add: sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple.
- Add dry ingredients stirring only until moistened.
- Spoon batter into two well greased and floured loaf pans.
- Bake at 350 degrees for 1 hour or until done. Cool 10 minutes in pan.
