Ingredients

The following ingredients have 4 Servings
  • 3 cup(s) all purpose flour
  • 2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) baking powder
  • 1 teaspoon(s) salt
  • 1 1/2 teaspoon(s) cinnamon, ground
  • 2 cup(s) sugar
  • 2 teaspoon(s) vanilla extract
  • 3 - eggs
  • 2 cup(s) coarsley shredded zuchinni
  • 3/4 cup(s) finely chopped pecans or walnuts
  • 1 can(s) (8 0z) crushed pineapple, drained
  • 1 cup(s) canola oil

Instruction

  • Combine flour, baking soda, salt, baking powder, cinnamon and nuts. Set aside.
  • Beat eggs slightly in large bowl then add: sugar, oil and vanilla. Beat until creamy. Stir in zucchini and pineapple.
  • Add dry ingredients stirring only until moistened.
  • Spoon batter into two well greased and floured loaf pans.
  • Bake at 350 degrees for 1 hour or until done. Cool 10 minutes in pan.
