Ingredients
The following ingredients have 8 Servings
- 1 cup wholemeal self-raising flour
- 3/4 cup brown sugar firmly packed
- 2 tsp ground cinnamon
- 2 cups carrot finely grated
- 1/2 cup oil
- 2 eggs
- 125 g cream cheese
- 60 g butter
- 2 cups icing sugar sifted
- 2 tsp vanilla extract
Instruction
- Combine flour, sugar, cinnamon and carrot in a bowl, stir in combined oil and eggs. Spray a 20 cm microwave ring cake pan with cooking oil spray, pour in cake mix.
- Cook in microwave on medium high for approximately 8 minutes, or until just cooked (cake starts to come away from sides of pan).
- Stand 5 minutes, turn onto wire rack to cool.
- Frosting: Beat cream cheese and butter until smooth. Gradually beat in icing sugar and vanilla extract.
- Top cake with frosting.
