Ingredients
The following ingredients have 4 Servings
- 1 onion
- 2 Tbsps vegetable oil
- 1 Tbsp paprika
- 1.667 cups Meat stock
- 2.667 cups waxy potatoes
- 1 green pepper
- 1 red pepper
- 2 cups cherry tomatoes
- 1 tsp marjoram
- 2 bay leaves
- salt
- peppers
- 12 small Sausage
- butter (for frying)
Instruction
- Peel and dice the onion. Heat the oil in a large pan and sweat the onion until soft. Remove from the heat, sprinkle with paprika and add the stock. Add the tinned tomatoes with their juice, the bay leaves and marjoram and simmer without a lid for about 20 minutes. Peel, wash and dice the potatoes. Halve and core the peppers, then wash and cut into pieces. Add the potatoes and peppers to the soup and cook for a further 15 minutes. Then add the cherry tomatoes and cook for a further 5 minutes. Season to taste with salt and pepper and remove the bay leaves. Meanwhile fry the sausages in butter, add to the vegetables and serve.
