Ingredients
The following ingredients have 4 Servings
- 2 bell peppers (cored and quartered)
- 3 jalapenos (left whole or cut in half, the seeds add spice)
- 2 zucchini (left whole if small, or cut into planks)
- 2 yellow summer squash (left whole if small, or cut into planks)
- 4 oz mushrooms (left whole or sliced and strewn on a skewer)
- 1 red onion (sliced thickly)
- 2 ears corn (cleaned and broken in half)
Instruction
- Once you've got all your vegetables prepped, brush them with olive oil and cook them on a clean, hot grill until tender, yet slightly crisp, about 8 to 10 minutes.
