Ingredients
The following ingredients have 12 Servings
- 2 1/2 cups self-raising flour
- 3/4 cup caster sugar
- 1 egg lightly beaten
- 1 tsp vanilla essence
- 2/3 cup vegetable oil
- 3/4 cup buttermilk
- 200 g frozen mixed berries
Instruction
- Preheat oven to 200C.
- Line a 12-hole (1/3 cup capacity) muffin pan with paper cases or lightly grease the pan.
- Sift the dry ingredients into a large bowl, then stir in the remaining ingredients. Do not over mix.
- Spoon the mixture into the prepared pan.
- Bake for about 20 minutes. Turn muffins onto a wire rack to cool.
