Ingredients

The following ingredients have 12 Servings
  • 2 1/2 cups self-raising flour
  • 3/4 cup caster sugar
  • 1 egg lightly beaten
  • 1 tsp vanilla essence
  • 2/3 cup vegetable oil
  • 3/4 cup buttermilk
  • 200 g frozen mixed berries

Instruction

  • Preheat oven to 200C.
  • Line a 12-hole (1/3 cup capacity) muffin pan with paper cases or lightly grease the pan.
  • Sift the dry ingredients into a large bowl, then stir in the remaining ingredients. Do not over mix.
  • Spoon the mixture into the prepared pan.
  • Bake for about 20 minutes. Turn muffins onto a wire rack to cool.
