Ingredients

The following ingredients have 5 Servings
  • 16 new potatoes, quartered
  • 1 teaspoon olive oil
  • 1 tablespoon toasted sesame oil
  • 4 tablespoons miso paste
  • 3 tablespoons fresh squeezed lemon juice
  • 2 scallions, diced
  • 1 tablespoon sesame seeds (can be white, black, toasted, not toasted, whatever)

Instruction

  • preheat oven to 425 degrees farenheit
  • in a medium sized bowl, add olive oil, sesame oil, miso paste, and lemon juice and mix until thoroughly incorporated.
  • add potatoes to miso mixtuer and toss to coat using your hands or a large spoon. pour into baking dish (pyrex, dutch oven, etc) cover with foil, and place into oven. bake for 20-30 minutes, stirring every 10 minutes.
  • remove from oven, discard foil, and stir again. return potatoes to oven and roast until outsides are golden brown and crisped up, and potatoes are fork tender on the inside.
  • remove from oven and sprinkle with sesame seeds and scallions and serve immedietely. note: you can season with salt if neccessary, but the brand of miso i use always seems salty enough for my liking.
