Ingredients

The following ingredients have 4 Servings
  • 3 medium aubergines (eggplants) (total weight about 600g - 700g (about 1½ lb))
  • 6 medium garlic cloves
  • 2 Tbsp salted butter
  • 1 Tbsp extra virgin olive oil
  • ½ tsp ground turmeric
  • 400 g canned tomatoes
  • 1 Tbsp sundried tomato paste (or regular)
  • ½ tsp salt
  • 2-5 eggs (whatever size)
  • freshly ground black pepper
  • chopped parsley or coriander (cilantro) (optional garnish)
