The following ingredients have 4 Servings
- 3 medium aubergines (eggplants) (total weight about 600g - 700g (about 1½ lb))
- 6 medium garlic cloves
- 2 Tbsp salted butter
- 1 Tbsp extra virgin olive oil
- ½ tsp ground turmeric
- 400 g canned tomatoes
- 1 Tbsp sundried tomato paste (or regular)
- ½ tsp salt
- 2-5 eggs (whatever size)
- freshly ground black pepper
- chopped parsley or coriander (cilantro) (optional garnish)
