Ingredients
The following ingredients have 4 Servings
- 1 Cup Basmati Rice / பாஸ்மதி அரிசி
- 1 Big Onion / பெரிய வெங்காயம்
- 1 Potato / உருளைக்கிழங்கு
- ¼ Cup Green Peas / பச்சை பட்டாணி
- ⅛ tsp Turmeric Powder / மஞ்சள்தூள்
- 2 tsp Garam Masala Powder / கரம் மசாலா தூள்
- 1½ Cup Water / தண்ணீர்
- Salt / உப்பு (As required)
- 2 tsp Lemon Juice / எலுமிச்சைச்சாறு
- ¾ Cup Mint Leaves / புதினா
- 3 to 4 Green Chilli / பச்சைமிளகாய்
- 1 Small Piece Ginger / இஞ்சி
- 4 to 5 Pods Garlic / பூண்டு
- 2 to 3 tbsp Coconut / தேங்காய்
- ¼ Cup Water / தண்ணீர் (To grind)
- 1 tsp Fennel Seeds / சோம்பு
- 1 Bay Leaf
- 1 Star Anise
- 1" Piece Cinnamon / பட்டை
- 3 Cardamom / ஏலக்காய்
- 2 Cloves / கிராம்பு
- 7 to 8 Cashew / முந்திரி (Optional)
- 2 tbsp Ghee / Oil / எண்ணெய்
Instruction
- First, get ready with the ingredients. Clean mint/coriander leaves, peel the skin of garlic and ginger. In a mixer, grind all the ingredients listed in the table 'To Grind'. Add 1/4 cup of water and grind it to a smooth paste.
- Rinse the rice well and soak in water for 1/2 an hour. Drain the water and keep the rice aside. Slice the onion lengthwise and cube the potato. In a heavy-bottomed pan, add ghee and temper all the ingredients given in the table 'To Temper'. Also, fry the cashews till golden brown.
- Add onions and saute till it is transparent. Then pour the ground paste and add the cubed potato.
- Add green peas, turmeric powder, garam masala powder and 1.5 cups of water.
- Add required salt and saute for 2 minutes. Then add the drained rice.
- Squeeze lemon juice and give a gentle mix without breaking the rice grains. pressure cook the rice in medium/temperature for 2 whistles. Once the pressure subsides by itself, open the lid and fluff up the rice with a fork (You can prepare it as a one-pot meal also).Serve this mint pulao with simple onion raitha.
