Ingredients
The following ingredients have 10 Servings
- 1 1/2 c. 12 oz. plain Greek yogurt
- 1/2 c. full fat coconut milk
- 3 tbsp. honey
- 3 tbsp. raw organic cacao powder (can substitute unsweetened cocoa powder)
- 4 tbsp. chia seeds
- 1 13.66 oz can unsweetened full fat coconut milk, chilled
- 1/4 tsp. mint extract
- 1/2 tsp. matcha green tea powder (to color)
Instruction
- In a large bowl, mix together Greek yogurt, coconut milk, and honey. Stir until well combined. Add cacoa powder and chia seeds and mix well once more. Cover with plastic wrap. and refrigerate for 1 hour, or until set.
- In a separate bowl, remove the thick white cream of the chilled coconut milk only; reserve liquid coconut milk for smoothie or other recipe.
- Add mint extract and matcha powder to thick cream. Using a hand mixer, whip coconut cream on high for 3-5 minutes or until cream forms a 'whipped cream' consistency.
- Layer pudding with mint whipped cream followed by another layer of pudding. Keep refrigerated until ready to serve.
