Ingredients
The following ingredients have 9 Servings
- 1 pound(s) ground beef
- 1 pound(s) Italian pork sausage
- 8 slice(s) bacon
- 1 can(s) black beans, rinsed & drained, 15 oz.
- 1 can(s) garbanzo beans, 15 oz.
- 3 slice(s) celery, chopped
- 1 medium red onion, chopped
- 1 medium green pepper, chopped
- 3 clove(s) garlic, chopped
- 2 can(s) diced tomatoes, 14.5 oz each
- 1 can(s) tomato juice, large, 46 oz.
- 2 medium jalepeno peppers, diced
- 1 tablespoon(s) cumin, cayenne pepper
- 1 teaspoon(s) red pepper flakes
- 1 teaspoon(s) salt and pepper
- 1 bunch(es) fresh cilantro, rough chop
Instruction
- Preheat oven to 400 degrees. When heated, place bacon on cookie sheet for approximately 12 min. Let drain on paper towels. When cool, give a rough chop, set aside.
- Meanwhile, spray a large skillet with cooking oil. Saute celery, onion, green pepper, jalapeno peppers and garlic over medium heat until tender.
- Then add ground beef and sausage. Cook until no longer pink; drain.
- In a large pot or Crock Pot, add meat/veggie mixture. Add all remaining ingredients. Stir. Let simmer on low for 3 hours. Enjoy!
- Optional toppings: shredded sharp cheddar cheese, diced onion, sour cream, bacon, cilantro. I have served this in a bread bowl and let guests choose their toppings! Makes a nice presentation too!
