Ingredients

The following ingredients have 4 Servings
  • 70 g plain flour
  • 2 eggs
  • 100 ml full-fat milk
  • 4 turkey sausages
  • 6 tbsp vegetable oil
  • a pinch of salt

Instruction

  • Preheat the oven to 220 degrees Celsius (428 Fahrenheit).
  • Cut up the sausages in small pieces enough to fit into a muffin tin (or yorkshire pudding tin).
  • Add the oil evenly between the muffin holes, then bake the sausages for about 10-15 minutes or until the are fully cooked.
  • In a bowl, sift the flour, add the eggs and salt, and whisk well.
  • Gradually add the milk, whisking continuously to avoid lumps forming.
  • When the sausages are done, remove them from the tin, and add more oil if needed, it should be about one tablespoon of oil in each muffin hole.
  • If more oil is added, pop the tin back in the oven for a few minutes to make sure the oil is smoking hot.
  • Divide the batter evenly between each muffin hole, about 2 tablespoons of batter for each, then top with the sausages and return to the oven.
  • Bake for about 15-20 minutes until the mini toads are puffed up and golden, but do not open the oven sooner than 15 minutes, so they can bake undisturbed.
  • Serve immediately.
