Ingredients

The following ingredients have 4 Servings
  • 6 small apples (peeled and diced)
  • 3 tbsp granulated sweetener
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 300 g ready rolled shortcrust pastry
  • low calorie cooking spray

Instruction

  • Pre-heat the oven to 200°C.
  • Place all the filling ingredients into a saucepan. Cook over a medium heat for 10 minutes, until the apple begins to soften.
  • While the filling is cooking, spray the muffin tray with low calorie cooking spray.
  • Cut rounds out of the pastry using a cookie cutter or a mug. Push them into the muffin tray to make the pie cases.
  • When the filling is ready, spoon it into the pastry.
  • Use the leftover pastry to make lattices or cut shapes to place on the top of the pies. If you prefer you can leave the tops naked!
  • Spray any pastry on the top of the pies with low calorie cooking spray and place into the oven for 20 minutes, or until the pastry is cooked and golden.
  • You can serve these hot or cold, just let them cool for 10 minutes after you take them out of the oven as they will be very hot!
