Ingredients

The following ingredients have 6 Servings
  • 1 pound ground beef, 80/20
  • 1/2 pound ground pork
  • 3/4 cup bread crumbs
  • 2 large eggs, beaten
  • 3/4 cup whole milk
  • 2 tsp sea salt
  • 1 tsp Italian seasoning
  • 1/4 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup ketchup
  • 2 Tbsp Brown sugar
  • 2 tsp Worcestershire sauce
  • 1 tsp water
  • ½-3/4 lb broccoli, florets
  • ½-3/4 lb baby potatoes, halved
  • 2 Tbsp extra virgin olive oil

Instruction

  • Preheat the oven to 350°F
  • Grease a large rimmed baking sheet, set aside.In a large bowl mix together the ground beef, pork and breadcrumbs until fully combined.In a medium-sized bowl, whisk the eggs together with the milk, 1 1/4 teaspoon salt, Italian seasoning, pepper, garlic powder, and onion powder.Stir the whisked egg mixture, and 3 tablespoons ketchup into the meat, until fully combined
  • Use a stand mixer for this step if you have one.In a small bowl mix together the remaining 1 tablespoon ketchup, brown sugar, Worcestershire sauce and water until fully combined.Place the broccoli and potatoes on the baking sheet and drizzle with olive oil and remaining 3/4 teaspoon salt
  • Toss to coat evenly and spread it all out on the baking sheet
  • Divide the meat into 6 pieces and create an oval about 4” by 3”
  • Nestle them between the broccoli and potatoes.Using a pastry brush, brush the brown sugar sauce over the tops of the meatloaves.Bake in the oven for 30 minutes until the internal temperature of the meatloaf registers 160°F with an instant read thermometer.
