Ingredients

The following ingredients have 4 Servings
  • 4 cup cauliflower florets
  • 1/2 red or yellow bell pepper, finely chopped
  • 1 egg
  • 3/4 cup shredded reduced-fat mozzarella cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instruction

  • Preheat oven to 375 degrees F. Coat two mini muffin pans with cooking spray.
  • In a food processor, pulse cauliflower until finely chopped. Place cauliflower in a large bowl; add red bell pepper, egg, 1/2 cup mozzarella cheese, the flour, garlic powder, onion powder, Italian seasoning, salt, and pepper; mix until thoroughly combined.
  • Spoon cauliflower mixture evenly into muffin pans and sprinkle remaining mozzarella cheese on top. Bake for 25 to 30 minutes, or until golden brown. Let cool slightly, then serve.
