Ingredients

The following ingredients have 4 Servings
  • 2 eggs
  • 3 tsp granulated sweetener
  • 2 slices wholemeal bread
  • 25 ml skimmed milk
  • ⅛ tsp cinnamon
  • ½ tsp vanilla extract
  • 20 g sultanas (you should get around 24 sultanas)
  • low calorie cooking spray

Instruction

  • Pre heat the oven to 180°C
  • Cut the crusts off the bread, then roll it out to a 2mm thickness
  • Whisk the eggs together with the sweetener, milk, cinnamon and vanilla
  • Spray 12 cups of a silicone mini muffin tray with some low calorie cooking spray, then spray both sides of the bread rounds
  • Place the bread in the egg mixture and let it soak in for a few minutes
  • Place one soaked round of bread in the bottom of each cup, then divide the sultanas evenly between each cup
  • Pour the remaining egg mixture evenly between all 12 muffin cups
  • Bake in the oven for 15 - 20 minutes until they are set and golden brown
  • Allow them to cool for a few minutes then remove from the tray and serve
