Ingredients
The following ingredients have 4 Servings
- 2 eggs
- 3 tsp granulated sweetener
- 2 slices wholemeal bread
- 25 ml skimmed milk
- ⅛ tsp cinnamon
- ½ tsp vanilla extract
- 20 g sultanas (you should get around 24 sultanas)
- low calorie cooking spray
Instruction
- Pre heat the oven to 180°C
- Cut the crusts off the bread, then roll it out to a 2mm thickness
- Whisk the eggs together with the sweetener, milk, cinnamon and vanilla
- Spray 12 cups of a silicone mini muffin tray with some low calorie cooking spray, then spray both sides of the bread rounds
- Place the bread in the egg mixture and let it soak in for a few minutes
- Place one soaked round of bread in the bottom of each cup, then divide the sultanas evenly between each cup
- Pour the remaining egg mixture evenly between all 12 muffin cups
- Bake in the oven for 15 - 20 minutes until they are set and golden brown
- Allow them to cool for a few minutes then remove from the tray and serve
