Ingredients

The following ingredients have 4 Servings
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 1 zucchini (diced)
  • 1 cup cabbage (shredded)
  • 2 cloves garlic (minced)
  • 30 oz kidney beans (drained)
  • 30 oz vegetable broth
  • 28 oz crushed tomatoes
  • 1 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups noodles
  • 1/4 cup parmesan cheese (shredded)

Instruction

  • Slice, dice, and chop vegetables as needed
  • Place all ingredients in the slow cooker except noodles and cheese
  • Stir to distribute the seasonings and broth
  • Cook on high for 4-5 hours or low for 7-8 hours
  • 30 minutes before serving, cook the noodles according to directions
  • Stir noodles into the soup
  • Serve the soup warm with the parmesan cheese on top
