Ingredients
The following ingredients have 4 Servings
- 1 onion (chopped)
- 2 carrots (sliced)
- 1 zucchini (diced)
- 1 cup cabbage (shredded)
- 2 cloves garlic (minced)
- 30 oz kidney beans (drained)
- 30 oz vegetable broth
- 28 oz crushed tomatoes
- 1 tsp basil
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups noodles
- 1/4 cup parmesan cheese (shredded)
Instruction
- Slice, dice, and chop vegetables as needed
- Place all ingredients in the slow cooker except noodles and cheese
- Stir to distribute the seasonings and broth
- Cook on high for 4-5 hours or low for 7-8 hours
- 30 minutes before serving, cook the noodles according to directions
- Stir noodles into the soup
- Serve the soup warm with the parmesan cheese on top
