Ingredients
The following ingredients have 8 Servings
- 3 Yukon Gold potatoes (rinsed and dried)
- 1 1/2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp chile powder
- 1 tsp kosher salt
- 1/8 tsp ground mustard
- pinch cayenne (optional)
Instruction
- Thinly slice potatoes using a mandoline. You want the potatoes as thin as you can get them.
- Soak the potatoes in cold water for 30 minutes changing out the water once.
- Pat the potatoes dry with a paper towel.
- Line a microwave safe plate with parchment paper.
- Place potato slices in a single layer on top of the parchment paper and spray with cooking spray.
- Heat on high heat in the microwave for 6 minutes or until slightly browned in the center and crisp. Different microwaves may require slightly different cooking times so start checking at 5 minutes.
- Combine the remaining ingredients in a small bowl and whisk together.
- Place microwaved chips in a ziploc or paper bag and sprinkle with the BBQ seasoning mix. Shake to coat.
- Serve and enjoy!
