Ingredients

The following ingredients have 7 Servings
  • 15 oz canned cannellini beans (drained and rinsed)
  • 15 oz canned kidney beans (drained and rinsed)
  • 15 oz canned black beans (drained and rinsed)
  • 1 cup frozen corn kernels (defrosted)
  • 3/4 cup red onion (chopped)
  • 1/2 cup poblano peppers (finely diced)
  • 1/2 cup red bell pepper (finely diced)
  • 2 tbs chopped fresh parsley
  • 1 tbs chopped fresh cilantro
  • 1/4 cup olive oil
  • 3 tbs white wine vinegar
  • 1 tbs lemon juice
  • 1/8 tsp cumin
  • 1/4 tsp chipotle chili powder
  • 1 clove garlic (minced)
  • 1 tbs sugar
  • 1 Pinch salt
  • 1 Pinch pepper

Instruction

  • Place the drained beans, corn, onion, peppers, parsley and cilantro in a large bowl.
  • Mix all dressing ingredients in a small bowl and whisk it well; pour over bean mixture and toss to coat.
  • Chill until ready to serve.
